July · La Nouaison

The fruit sets

Flowers turn into hard green berries. The Mediterranean sun and constant wind keep the fruit naturally healthy.

August · La Véraison

Colour comes in

Green berries blush, then darken to purple-black. Sugar rises, acidity softens, the leaves start to turn.

September · Les Vendanges

Picked by hand

Syrah, Carignan, Grenache and Mourvèdre from the schist terraces of Latour-de-France and Tautavel.

Harvest week · Le Pressurage

The first juice

Pressed and fermented with indigenous yeasts in conical concrete vats. Nothing added to start it.

6–12 months · L'Élevage

Sealed in oak

The young wine runs into the barrel and the bung goes in. It rests in conical wood vats and Stockinger barrels before the final blend.

Spring · La Mise en bouteille

Drawn from the barrel

The blend is drawn off through the tap, bottle by bottle, then corked.

Pour mon Père

A tribute cuvée. Stewed dark fruit, spice, praline and vanilla, with tannins that bring roundness and length.

The Estate

The estate in 60 seconds.

Since 2005, the Fabre family has been part of the long history of Château de Gaure — winegrowers, father to son, for five generations. We bought this estate on a genuine coup de cœur, fascinated by its history and the magic of the place.

Art, nature and wine share the same grounds here — from the paintings and sculptures scattered through the garden to the biodynamic vines that surround the château on every side.

Three terroirs.

Gaure

The vineyard immediately around the château, split between the Pech de Loup slopes (200m, shallow clay-limestone, Mediterranean-marked, fresh and gently mineral wines) and the Pradou plateau (300m, deep clay-limestone around the old sheepfold, plus a one-hectare plot of massale-selection Pinot Noir on rolled pebbles). Vines planted in the 1980s by Monsieur Salasar, a noted Limoux grower.

Campagne-sur-Aude

A single 15-hectare block around the village of Campagne-sur-Aude, tucked along the Aude valley and sheltered from the wind by the first foothills of the Pyrenees. At 300–500m altitude and made mostly of red clay, it is the estate's freshest, highest terroir.

Latour-de-France

The most southerly vineyard in France, in the heart of the Agly valley — over 30 parcels across 4 communes, planted on terraced gneiss and black schist. Contrast defines it: altitude against vertiginous slopes, rare rainfall concentrated in autumn and spring, and the dry Tramontane wind sweeping through on all but every other day.

Pierre Fabre's creative world runs through every corner of the estate — his own paintings hang in the chapel and cellar, and their imagery becomes the artwork on every wine label — living alongside the biodynamic vineyard practices that define how the wine is grown.
